Sesame paste salad and garlic chicken Japanese style

Garlic chicken Japanese style / String beans salad with sesame paste / Tomato salad / Miso soup with eggplant
鶏むねのガーリック照り焼き/いんげんの胡麻和え/トマトと新たまねぎのサラダ/ナスの味噌汁

The vegetables with sesame paste is called “Goma-ae(胡麻和え)” in Japanese. This recipe is from Japanese traditional vegan cuisine “Shojin-ryori”. You can use other boiled vegetables for goma-ae, for example; spinach, snow peas, asparagus, broccoli and eggplant. You can use white sesame seeds as well. If it is not roasted, please roast in the frying pan before using.

String beans with sesame paste recipe (4 servings)

Ingredients:
150-200 g string beans (haricot papu)
5 tbsp roasted sesame (black or white)
1/2 tbsp sugar
1 tbsp soy sauce
1/2 tbsp sake or dry white wine

1. Clean the string beans and cut into the half.

Bring water to a boil in a pan and add a little salt. Add the string beans, when the water boils again, remove the string beans from the water.(Don’t boil too much!!)

Soak it in cold water for a few minutes and drain it.

2. Crush the sesame seeds in a mortar or sutibachi (すり鉢). You can also buy ready crushed sesame seeds in the Tokyokan.Add the sugar, soy sauce and sake to the mortar, and mix.
3. Pat the string beans dry with a kitchen towel to remove the excess water.
4. Combine string beans and sesame paste in the bowl.

Garlic chicken Japanese style Recipe (4 servings)

Ingredients:
300-400g Chicken breast
1 small onion or 1/2 big onion
2 garlic clove

Marinade sauce:
4 tbsp soy sauce
4 tbsp sake or dry white wine
1 tsp sugar
1 tbsp honey

black pepper
flour
1 tbsp vegetable oil for frying

1. Slice the chicken into 1.5 cm thick slices. Pierce the chicken with a fork so it’ll better absorb the seasoning.
2. Grate garlic and onion with grater into the bowl. You can use cheese grater (raastin).
Add marinade sauce ingredients to the bowl and mix.
3. Add chicken to the bowl and mix by hand. Put in the refrigerator for 1-2 hours.
The enzyme of onion softens the chicken. You should wait an hour or more.
4. Pat the chicken dry with a kitchen towel. Set a side the marinade sauce.
5. Coat the chicken with the flour.
6. Turn on the heat to the pan and add vegetable oil. Add the chicken to the pan.
Fry both side of chicken with lid until it get golden brown color.
Open the lid, add the marinade sauce and cook until sauce become thicken.
